Lunch: Lemon Herb Quinoa Salad with Grilled Chicken

Quinoa Recipe Chicken


1 cup cooked quinoa

1/2 cup chopped cucumber

1/4 cup chopped red onion

1/4 cup chopped fresh herbs (parsley, cilantro, mint)

1/4 cup crumbled feta cheese

Grilled chicken breast (seasoned with lemon and herbs)

Dressing: 2 tablespoons olive oil, 1 tablespoon lemon juice, salt and pepper to taste


Combine quinoa, cucumber, red onion, herbs, and feta in a bowl.

Slice grilled chicken and add to the bowl.

Whisk together dressing ingredients and drizzle over the salad.

Toss to combine and enjoy a protein-packed, nutrient-rich lunch that will keep you feeling full and satisfied.
