Dinner: Salmon with Roasted Veggies and Turmeric Dressing


1 salmon fillet (skin-on or skinless)

Assorted vegetables (broccoli, carrots, sweet potatoes, Brussels sprouts)

1 tablespoon olive oil

Salt and pepper to taste

Turmeric Dressing: 1/4 cup tahini, 1 tablespoon lemon juice, 1 tablespoon olive oil, 1 teaspoon turmeric, water to thin


Preheat oven to 400°F (200°C).

Toss vegetables with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-30 minutes, or until tender.

While vegetables roast, season salmon with salt and pepper. Cook in a pan or oven until cooked through.

Whisk together dressing ingredients until smooth.

Serve salmon with roasted vegetables and a drizzle of turmeric dressing. Enjoy a delicious and anti-inflammatory dinner that’s packed with nutrients.
